It's not NG to slurp
In Japan, people sometimes make noise while eating.
Noodles for example.
To foreigners, this may seem like a dirty way of eating, but in Japan, it is common to slurp soba and ramen.
By sipping and eating, you can feel more flavor like tasting wine.
Not all noodles are slurped and eaten.
Sometimes I avoid things that the sauce may splatter and pasta.
すすって食べることでワインのテイスティングのように、より風味を感じることができます。
全ての麵類をすすって食べるわけではありません。
ソースが飛びそうなものやパスタは避けることもあります。
I don’t think it’s familiar, but I want you to understand it as a part of Japanese food culture.

Neither have much flavor.
So why do Japanese people like to eat it?
I think these three are the main reasons why I like it.
1.Flavorful (Bread is also different between rye and wheat, right?)
2.It goes down well
3.Rich in variety depending on the seasoning
蕎麦の味に近いのはうどんです。こちらの方が海外では有名ですかね。
どちらもあまり味はありません。
ではなぜ日本人は好んで食べるのか?私は主にこの3つのが好きな理由ではないかと思います。
1.風味がある(パンもライ麦と小麦では違うでしょう?)
2.喉越しが良い
3.味付によってバラエティーに富む

Soba noodles are less sticky than wheat flour, so they are often mixed with wheat flour.
There are “ju-wari soba”(100% buckwheat noodles) and “nihachi soba”(80% buckwheat noodles).
蕎麦は小麦粉よりも粘性がないので、小麦粉と混ぜて作ることが多いです。
大きく分けて十割蕎麦と二八蕎麦があります。
※This is how I understand it.
・ju-wari:ju=10,wari=10%⇒10×10=100%
・nihachi:ni=2,hachi=8⇒2:8⇒80% buckwheat noodles
I guess it’s a choice to take down the throat or take the flavor.
I prefer nihachi soba.
